Two smashed short-rib patties, aged cheddar, burnt onion jam and house pickles in a milk bun. Served with a wedge of house pickle and a small pot of burnt onion mayonnaise.
Two eighty gram patties of coarse ground short rib are pressed hard onto a screaming flat top so the edges caramelise before the centre is cooked. A slice of aged cheddar goes on each patty as it comes off the heat, then the two are stacked with burnt onion jam and house pickles inside a milk bun toasted in beef fat.
The jam takes four hours: onions cooked slowly until they collapse, then pushed further until they take on colour and a faint bitterness that cuts through the fat. It is the single ingredient that makes this burger taste like ours and nobody else’s.
Order it alongside our twice-cooked rosemary fries and a salted caramel shake. If you are eating in, ask for it cut in half; it is easier to handle and the cross section is genuinely worth looking at.

Asked for the gluten free bun and it arrived properly toasted rather than as an afterthought. Small thing, but it says a lot about the kitchen.
Excellent, though I would happily pay a little more for a third patty option. The pickles are exactly the right level of sharp.
